So I spent the better part of the afternoon preparing a picnic dinner for my family and I to enjoy aboard our afternoon sail. I made a pasta salad, and BBQ Chicken Legs:
- About a half of a box of Ronzoni Garden Delight
- 6 cloves of roasted garlic
- A handful of kalmata olives
- Sliced roasted red peppers
- About 3/4 pint of cherub tomatoes
- About 1 cup petite mozzarella balls
- Tossed with some Ken’s Light Balsamic Dressing
BBQ Chicken Legs (I used the Pioneer Woman’s recipe for time/temperature)
- A Value sized package of chicken legs
- Olive Oil, Salt, Pepper
- Roasted at 450 degrees for about 35 minutes
- Basted with Jack Daniel’s BBQ Sauce (our new favorite is the Hickory Brown Sugar)
Unfortunately……we were forced to eat our picnic in our car!! If you know anything about Boston, you know that 93 is ALWAYS congested. We definitely under estimated the traffic. We were booked on a 3:30 pm day cruise with the Classic Harbor Line on the Adirondack III and at 3:00 we still weren’t off 93!! Fortunately, the company was uber understanding. They were willing to wait for us or reschedule our cruise for another day, if need be. At 3:20 we finally arrived at the parking garage. My daughter and I hoofed it over to the check-in desk while my husband re-parked our car. The company kindly checked us in and even waited until 3:35 for my husband to show up. In our rush to get to the cruise and park the car, we totally forgot our picnic in the car!! (Even though we had to eat in the car on the way home, in traffic….it was “yum yum yum” as my daughter said!)
Aboard the ship, the captain and crew showed all the guests the same wonderful treatment. They apologized for the delay and promised extra time out on the water! The crew chatted with all the guests making everyone feel welcome! Water and sodas were complimentary, while beer and wine were $5 each.
It was the perfect day for a cruise. The wind was blowing in the perfect direction, so we were able to head out to the harbor islands! It was amazing to see all the sights of Boston from the water. We can’t wait to bring friends and family back with us!
